Belated bacon jam

Last winter I got a lesson in making bacon jam. Thanks Tanya! Somehow I never got the photos put here.


Ended up with three jars of deliciousness.

 
First we have to start with the family recipe.

What would bacon jam be without bacon. Lots and lots of bacon!
A healthy dose of onions, chopped, not too finely.

We'll need some wine vinegar and maple syrup.
Let the cooked bacon rest while we cook the onions.
Cook the onions in a little of the reserved bacon drippings. Add the garlic.
Keep cooking the onions.
Combine and make the goodness.

Next Time: 

I wonder how it would be with apple syrup rather than maple syrup.
