Pi-tato pi-ttata for Pi Day

In honor of Pi Day I wanted some pi themed lunch. With mashed potatoes staring me in the face as I opened he fridge I wondered about a potato frittata, or rather, a pi-tato pi-ttata!

For the faux crust, heavily butter a pyrex pi pan then dust heavily with almond meal.
Mix up a batter of mashed potatoes (maybe a cup), 4 eggs, some sour cream, milk, and roasting salt.

Preheat oven to 450, but lower to 350 when putting in the pi.

For the bottom layer,

  • Sauté some leeks with some chopped cooked frozen bacon in bacon drippings or your fat of choice (or make some bacon then cook the leeks in the bacon drippings). 
  • Toss with some chopped cooking greens (spinach, bok choy, cabbage, ...). 
  • Add some chopped cheese (such as cheddar)
  • Add half the batter. 
  • Pour this mixture in the prepared pan. 


For the top layer mix
  • some chopped ham, 
  • pesto, 
  • roasted chopped fennel bulb, 
  • or whatever you have laying around
  • the other half of the batter.
  • Pour into the pan. 


Cover with grated hard cheeses and the symbol for pi rendered in ham.

Bake to an internal temperature of 175 (maybe 30-35 minutes at 350).


Cool (if you can stand to wait), slice, and serve.
